First, you’ll want to seek out ripe mangoes (unless your recipe specifically calls for green mango) that are fragrant, and yield slightly to pressure when given a gentle squeeze. Most mangoes lose their green hue when ripe, turning shades of red or bright yellow, depending on the variety. Look for fruit with no black spots that isn’t overly wrinkled. 

To cut a mango, begin by slicing a small portion off the wider end. Stand the fruit up, vertically, and, using a sharp chef’s knife, cut off each of the wider sides, along the flat side of the pit. Then, crosshatch each side to create cubes. Pop the cubes up by pushing on the underside of the mango skin, and cut the cubes from the skin. Cut any remaining flesh from the pit, and reserve.
