Mango Salsa Baked Cod with BBQ Slaw Rice

  • 1 bag Success® Jasmine Rice
  • 4 cod filets
  • 2 tbsp olive oil
  • 1/4 cup mango, diced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 4 tbsp lime juice, divided
  • 3 tsp salt, divided
  • 1/8 tsp black pepper
  • 1/4 cup BBQ sauce
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 cup shredded cabbage


  • Step 1: Preheat oven to 400ºF. Prepare rice according to package directions.

  • Step 2: Cover fish with olive oil, season with 2 1/2 tsp of salt. Place fish on a baking sheet and cook for 15 minutes or until cooked through and flaky.

  • Step 3: In a medium bowl, combine mango, red onion, cilantro, 1/2 lime juice, remaining salt, and pepper.

  • Step 4: In a small bowl, whisk the remaining lime juice, BBQ sauce, cumin and paprika together. 

  • Step 5: In a separate medium bowl, toss the cooked rice, shredded cabbage, and BBQ sauce mixture together. Let the coleslaw sit for at least 10 minutes to allow the flavors to meld together.

  • Step 6: Top cooked fish with mango salsa and serve with rice mixture.
