Ingredients

  • 2 bags Success® Jasmine Rice
  • 2 tbsp canola oil
  • 1 lb peeled, deveined medium shrimp, tail removed
  • 8 baby bok choy, trimmed and quartered
  • 1/2 cup diced fresh mango
  • 1 tbsp minced fresh ginger root
  • 1/4 tsp salt
  • 3 tbsp soy sauce
  • 2 tbsp lime juice

  • You’ll love this fried rice, made with juicy shrimp that are sautéed in an aromatic blend of ginger, lime and soy sauce. The combination of the sweet mango, citrusy lime and savory bok choy blends perfectly with fragrant Success® Jasmine Rice to make an outrageously delicious meal.     Step 1

  • Prepare rice according to package directions. Allow to cool completely.

    Step 2

  • Meanwhile, heat oil in a wok or large skillet set over medium-high heat. Add shrimp, bok choy, mango, ginger and salt and sauté for 3-5 minutes, or until shrimp start to curl and bok choy starts to wilt.

    Step 3

  • Stir in rice. Cook for 2-3 minutes, or until well coated. Stir in soy sauce and lime juice and cook for 2-3 minutes more, until rice is heated through.

    Recipe Tip

    If you don’t have any bok choy on hand, try making this recipe with small broccoli florets or trimmed green beans, instead.

The Best Fried Rice

The beauty of easy recipes like fried rice is that you can use up almost any veggies you have in your fridge. So, if you find yourself with a handful of leftover vegetables, gather them up before starting to cook. If they are precooked, simply add them in after the shrimp and bok choy are cooked through.

If you’re unsure of which vegetables you can add in, we’ll highlight the best options for fried rice as well as the order to toss them in, because some veggies cook quicker than others.

Carrots, onions (excluding green onions), hearty greens such as bok choy and cabbage, broccoli, peppers, and zucchini are all longer-cooking veggies. These should be added closer to the beginning of your cook time so that they cook properly.

Mushrooms, garlic, ginger, snap peas and corn are quicker-cooking veggies. These require less time to fully cook through.

Shrimp Tips

For this dish, we recommend that you opt for medium-sized or large shrimp. You may use frozen or fresh as either will provide that succulent shrimp texture and taste. If your shrimp come with their shell-on, try stir-frying them in their shells for extra flavor.
