Ingredients

  • For the Crust:
  • 1 bag Success® White Rice
  • non-stick cooking spray
  • 1/4 cup sugar
  • 2 egg whites, beaten
  • 1 tsp ground cinnamon
  •  For the Filling:
  • 2 pkg (8 oz. each) fat-free cream cheese
  • 1/2 cup fat free sour cream
  • 1/2 cup powdered confectioners’ sugar
  • 2 tsp vanilla extract
  •  For the Topping:
  • 1 red apples, thinly sliced
  • 10 strawberries, thinly sliced
  • 1 mango, thinly sliced
  • 1/2cup apple jelly

Instructions

  • For a dessert with a difference, this Fruit Tart featuring strawberries, mangos and apples with Success® White Rice will be a surefire hit at your dining table!

    Step 1

  • Prepare rice according to package directions. Preheat oven to 350°F. 

    Step 2

  • Combine rice with all remaining crust ingredients in a large bowl; mix well. Press rice mixture on to bottom of 8-inch springform pan. Bake for 10 minutes. Cool to room temperature. 

    Step 3

  • Beat together cream cheese and sour cream in a medium bowl until well blended. Add confectioners’ sugar and vanilla; mix well. Spread cream cheese mixture over rice crust. Refrigerate until cream mixture has set. 

    Step 4

  • Arrange fruit over cream cheese mixture. Heat apple jelly until dissolved. Brush over fruit. 

    Recipe Tip

    Powdered sugar can be dusted on top, if desired.

Apple Delights

Apples are delicious when baked, complement other flavors well, and have a wide range of uses. Who can refuse apple cinnamon anything? Apple cakes, pies, crumbles, and tarts make fantastic gifts, breakfast foods, or snacks. The drawback is that adding raw apples to desserts might result in leathery, undercooked fruit that is difficult to cut through. But if you sauté your apples beforehand, you can correct that. 

By sautéing your apples in butter before baking them, you can retain the firmness of an apple while also enhancing the flavor. The butter gently pre-cooks the apples so they may release excess water and complete cooking in the oven while sealing in the apple juices to prevent them from leatherizing.
