These Thai Style Rice and Shrimp Wraps are easy to make and are sure to be a hit with family and friends. Enjoy them as a quick weeknight dinner, or as an easy, to-go meal!
Step 1
Prepare rice according to package directions, substituting coconut milk for 2 cups of the water.
Step 2
Place cooked rice in a large bowl. Add shrimp, mango, green onions, cilantro, peanuts, rice vinegar, sesame oil, curry paste and soy sauce and stir thoroughly to combine.
Step 3
Divide mixture between warm tortillas. Roll up and serve with prepared peanut sauce, if using.
