Thai Style Rice and Shrimp Wraps

Ingredients

  • 1 bag Success® Jasmine Rice or Success® White Rice
  • 1 can (15 oz.) light coconut milk
  • 1 cup salad shrimp, cooked
  • 1 each mango, peeled and diced small
  • 1 green onion, minced
  • 2 tbsp fresh cilantro leaves
  • 2 tbsp roasted salted peanuts, chopped
  • 1 tbsp sesame oil
  • 1 tbsp seasoned rice vinegar
  • 1 tsp soy sauce
  • 1 tsp green curry paste
  • 4 each burrito size spinach tortillas, warmed
  • prepared peanut sauce, optional

Instructions

  • These Thai Style Rice and Shrimp Wraps are easy to make and can be enjoyed with family and friends at the dinner table, or as an easy to-go meal!

    Step 1

  • Prepare rice according to package directions, substituting coconut milk for 2 cups of the water.

    Step 2

  • Place cooked rice in a large bowl and stir in remaining ingredients (except tortillas) until well combined. Equally divide mixture and spoon on warm tortillas.

    Step 3

  • Roll up and serve. Serve with prepared peanut sauce, if desired.
