  • 1 bag Success® Brown Rice
  • 1 1/2 cups coconut milk, divided
  • 2 egg whites
  • 1/2 cup sugar
  • 2 apples, peeled, cored, and coarsely chopped
  • 1/2 cup cranberries
  • 1/2 cup dried apricots, quartered
  • 2 tbsp vanilla extract

    Step 1

  • Prepare rice according to package directions.  

    Step 2

  • In a saucepan, add 1 cup milk to cooked rice, simmer, stirring occasionally to prevent sticking. Cook until thickened (about 10 minutes). 

     Step 3

  • In a small bowl, beat together remaining milk and egg whites with a whisk. Add to rice-milk mixture. Stir in sugar; add apples, cranberries, apricots, and vanilla. Cook, stirring constantly, until mixture thickens. Make sure that it does not boil. 

    Recipe Tip

    Cranberries can be substituted with dried cherries, figs or raisins.
