Ingredients

  • 1 bag Success Garden and Grains™ White Rice, Black Beans, Corn, & Bell Peppers
  • ½ cup prepared salsa
  • 1 tablespoon vegetable oil
  • 4 eggs
  • Salt and black pepper
  • ¼ cup queso fresco, crumbled
  • 1 avocado, seeded, peeled and sliced
  • Corn tortilla chips

Instructions

  • Using a delicious blend of Success Garden and Grains™ White Rice, Black Beans, Corn, & Bell Peppers, you’ve got a hearty and filling base for this Tex-Mex inspired breakfast bowl to start your day with a kick.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • In a medium bowl combine rice and salsa. Set aside and keep warm.

    Step 3

  • Heat oil in a large skillet over medium heat. Fry eggs to desired doneness and season with salt and pepper to taste. Keep warm.

    Step 4

  • Divide rice mixture into 4 bowls and top with eggs. Serve with queso fresco and avocado slices. Serve with tortilla chips.
