Ingredients

  • 1 bag Success® Tri-Color Quinoa
  • 1 cup apple juice
  • 2 tbsp unsalted butter
  • 1 large apple, cored and sliced
  • 1/4 cup dried cranberries
  • 1 tbsp brown sugar
  • 1 tbsp maple syrup
  • 1 tsp ground cinnamon
  • 1/4 cup walnuts (optional)
  • 1 cup vanilla yogurt (optional)

Instructions

    Step 1

  • Prepare quinoa according to package directions, using apple juice in place of one cup of water.

    Step 2

  • Melt butter in a medium skillet over medium-low heat. Add apples, dried cranberries, brown sugar, maple syrup and cinnamon. Cook, stirring occasionally, until apples are just tender, about 5 minutes.

    Step 3

  • Stir in nuts, if using. Serve quinoa topped with apple mixture and yogurt, if using.
