Almond and Date Brown Rice Breakfast Porridge

  • 1 bag Success® Brown Rice
  • 2 cups almond milk
  • 8 dates, pitted and chopped, divided
  • 1/2 tsp ground cinnamon
  • 2 bananas, mashed
  • 1 tsp vanilla extract
  • 2 cups fresh mixed berries
  • 1/2 cup sliced almonds


  • Step 1

  • Prepare rice according to package directions.

    Step 2

  • In large saucepan set over medium-high heat, combine cooked rice, almond milk, half of the dates and the cinnamon; bring to boil.

    Step 3

  • Reduce heat to medium-low; cook, stirring, 8 to 10 mins or until rice is very tender and mixture is creamy and thickened. Stir in mashed bananas and vanilla.

    Step 4

  • Divide porridge among 4 bowls. Top with berries, almonds and remaining dates.

    Recipe Tip

    For a nut-free coconut variation, substitute dairy-free coconut beverage for almond milk, and toasted coconut for sliced almonds.
