  • 1 bag Success® Brown Rice
  • 2 cups almond milk
  • 8 dates, pitted and chopped, divided
  • 1/2 tsp ground cinnamon
  • 2 bananas, mashed
  • 1 tsp vanilla extract
  • 2 cups fresh mixed berries
  • 1/2 cup sliced almonds


Reheating Porridge

If you end up with extra porridge, you could refrigerate it for a couple of days. In fact, you could even portion it out and freeze it in freezer-safe bags for a few months! Keep in mind that grains continue to absorb all the flavor and moisture from the other ingredients and, thus, will thicken up. Simply splash in some extra almond milk before reheating and you’ll get that creamy texture back. There’s a couples ways to revive this delicious dish:

Stovetop: Simply simmer leftovers on low heat until it’s thoroughly heated – about 5 minutes.

Microwave: Microwave for a minute and then stir before heating for an additional minute.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • In large saucepan set over medium-high heat, combine cooked rice, almond milk, half of the dates and the cinnamon; bring to boil.

    Step 3

  • Reduce heat to medium-low; cook, stirring, 8 to 10 mins or until rice is very tender and mixture is creamy and thickened. Stir in mashed bananas and vanilla.

    Step 4

  • Divide porridge among 4 bowls. Top with berries, almonds and remaining dates.

    For a nut-free coconut variation, substitute dairy-free coconut beverage for almond milk, and toasted coconut for sliced almonds.
