  • Prepare rice according to package directions.

    Step 2

  • In a medium bowl combine peanuts, sesame seeds and ginger. Add tofu and toss to coat.

    Step 3

  • Heat sesame oil in a large wok or skillet over medium high heat. Add tofu and stir fry until edges begin to brown, about 5 minutes. Push tofu to one side and add vegetable oil to wok. Stir fry broccoli and bell peppers 3 minutes or until crisp tender.

If you can’t find Success Garden & Grains blends near you, you can substitute Success White Rice and a 1 cup of fresh or frozen Asian blend (peas, carrots, red bell pepper) vegetables. No need to thaw or precook. Just add to water in the last 3-5 minutes of preparation.

Cooking With Tofu

Tofu is a soy plant-based protein that is often used as a meat-free alternative in vegan and vegetarian recipes. One of the best features of tofu is that it can be marinated in an infinite number of ways as it absorbs all the flavors. To prepare tofu for this recipe, make sure it is drained of any excess liquid and cut into bite-sized cubes to add into the stir fry. To brown the tofu, it is first added in before the vegetables to obtain a browned color.

And, using Success Garden and Grains™ White Rice, Peas, Carrot & Red Bell Peppers takes away half the hassle of any meal by using a premixed blend of rice and veggies. Not only does it cook up in 10 minutes, but it also adds extra vegetables and flavor to any meal.

If you’re looking to add more Meatless Monday recipe ideas into your weekly routine, try swapping in tofu in place of chicken, beef or shrimp in yoru favorite recipes or use another plant-based alternative like tempeh in this Jerk Tempeh Rice Skillet.
