Ingredients

  • 1 bag Success® Brown Rice
  • 1/2 cup chopped peanuts
  • 1 tbsp sesame seeds
  • 1 tsp ground ginger
  • 1 package (14 oz) extra firm tofu, drained and cut into bite-sized cubes
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 1 cup broccoli florets
  • 1/4 cup peas
  • 1/4 cup carrots, sliced thin
  • 1/4 cup red bell pepper, seeded and sliced thin
  • 1/4 cup yellow bell pepper, seeded and sliced thin
  • 1/2 cup bottled stir-fry sauce
  • 1 green onion, sliced thin

Instructions

  • This hassle-free stir-fry recipe is made with tofu and a base of nutty brown rice for a convenient meal with delicious flavor in just 20 minutes!

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • In a medium bowl combine peanuts, sesame seeds and ginger. Add tofu and toss to coat.

    Step 3

  • Heat sesame oil in a large wok or skillet over medium high heat. Add tofu and stir-fry until edges begin to brown, about 5 minutes. Push tofu to one side and add vegetable oil to wok. Stir-fry broccoli, peas, carrots, red and yellow bell peppers for 3 minutes or until crisp tender.

    Step 4

  • Add rice and stir-fry sauce and stir -fry all ingredients until well combined. Serve topped with green onions.

One of the best features of tofu is that it can be marinated in an infinite number of ways as it absorbs all the flavors.
