This hassle-free stir-fry recipe is made with tofu and a base of nutty brown rice for a convenient meal with delicious flavor in just 20 minutes!
Step 1
Prepare rice according to package directions.
Step 2
In a medium bowl combine peanuts, sesame seeds and ginger. Add tofu and toss to coat.
Step 3
Heat sesame oil in a large wok or skillet over medium high heat. Add tofu and stir-fry until edges begin to brown, about 5 minutes. Push tofu to one side and add vegetable oil to wok. Stir-fry broccoli, peas, carrots, red and yellow bell peppers for 3 minutes or until crisp tender.
Step 4
Add rice and stir-fry sauce and stir -fry all ingredients until well combined. Serve topped with green onions.
