Prepare rice according to package directions.
Heat a large wok or skillet over medium high heat. Add bacon and cook until crisp. Remove bacon leaving 2 tablespoons drippings in wok. Reduce heat to medium.
Pour eggs into wok and stir until eggs are just starting to set. Quickly add rice, peas, carrots, and bell pepper, and soy sauce and stir fry to combine. Top with green onions and reserved bacon. Garnish with sesame seeds, if desired.
Substitute bacon with breakfast sausage.
