Make your own Southwest-inspired power rice bowl loaded with everything you need to keep you feeling full and energized.
Prepare rice according to package directions.
In a large skillet heat olive oil over medium heat. Add black beans, corn, and bell peppers. Cook for 2 minutes. Combine with rice.
In a small bowl combine sour cream, cilantro and lime juice.
Divide rice into individual bowls and top with avocado, salsa, cheese and onions. Finish with a dollop or drizzle of sauce.
Add sliced grilled chicken or beef.
