Ingredients

  • 1 bag Success® White Rice
  • 1/4 cup black beans
  • 1/4 cup corn
  • 1/4 cup bell pepper, chopped
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, finely chopped
  • 2 tsp lime juice
  • 1 large avocado, sliced
  • 1 cup salsa
  • 1/2 cup Mexican blend cheese, shredded
  • 1/4 cup red onion, chopped

Instructions

  • Make your own Southwest-inspired power rice bowl loaded with everything you need to keep you feeling full and energized.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • In a large skillet heat olive oil over medium heat. Add black beans, corn, and bell peppers. Cook for 2 minutes. Combine with rice.

    Step 3

  • In a small bowl combine sour cream, cilantro and lime juice.

    Step 4

  • Divide rice into individual bowls and top with avocado, salsa, cheese and onions. Finish with a dollop or drizzle of sauce.
