  • 2 cups baby arugula
  • 1 cup cherry tomatoes, halved
  • ½ cup chopped celery
  • 1 cup shredded rotisserie chicken
  • ½ cup bottled vinaigrette

  • Prepare rice according to package directions.

    Step 2

  • In a large bowl toss together rice, arugula, tomatoes, celery, chicken, and vinaigrette.  Arrange on platter or individual bowls.

  • Serve immediately.

    Substitute your favorite greens for arugula and favorite bottled dressing.

    If serving later, wait to add vinaigrette so greens will not wilt.
