Ingredients

  • 1 bag Success® White Rice
  • 1 cup (8 oz) egg substitute
  • 1/2 cup turkey ham, finely chopped
  • 1/4 cup green onion, chopped
  • 1/4 cup pimientos, chopped (optional)
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper
  • 2 Tbsp margarine
  • 1/4 cup low fat Cheddar cheese, shredded

Instructions

  • Step 1

  • Prepare rice according to package directions. 

    Step 2

  • Combine rice, egg substitute, turkey ham, green onions, pimentos, salt and black pepper in a large bowl; mix well. 

    Step 3

  • Melt margarine in a large skillet over medium heat. Add rice mixture. Cook; stirring occasionally, until eggs are set, about 2 minutes. (Do not overcook.)  

    Step 4

  • Sprinkle with cheese. Remove from heat; stir gently. Serve immediately.
