  • 1 jar (6 oz.) marinated artichoke hearts, drained
  • 3 oz Mozzarella cheese, diced
  • 3 oz ham, diced
  • 1 tomato, chopped
  • 2 each ribs of celery, diced
  • ½ cup sliced ripe olives
  • ¼ cup capers
  • ⅓ cup fat free Italian dressing
  • 3 Tbsps rice vinegar
  • ½ tsp fresh oregano leaves
  • 1 tsp Dijon mustard
  • salt and ground black pepper, to taste
