  • 2 celery ribs, diced
  • 1 tomato, chopped
  • 1/3 cup Italian dressing
  • 3 tbsp rice vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp fresh oregano leaves
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 butter lettuce leaves (optional)
