Prepare rice according to package directions. Allow to cool.

Combine rice, artichoke hearts, ham, cheese, olives, capers, celery and tomato in a large bowl. Toss gently to combine.

Whisk together Italian dressing, vinegar, Dijon, oregano, salt and pepper in a small bowl. Pour over rice/vegetable mixture and toss to combine. Serve salad in lettuce leaves, if using.
