Prepare quinoa according to package directions. Preheat oven to 400°F. Coat 16 muffin cups with non-stick cooking spray.
In a large bowl combine quinoa, sausage, baking mix, and cheese. Stir in milk and eggs and blend well.
Pour ¾ cup of mixture into each muffin cup.
Bake 18-20 minutes.
Serve warm with maple syrup, if desired. Refrigerate leftovers. Makes 16 muffins.
No baking mix? No problem! Substitute 2 cups all-purpose flour + 1 tablespoon baking powder + pinch of salt. For bite-sized muffins use 4 mini muffin tins and decrease cook time to 10-12 minutes
