Sausage, Egg and Cheese Muffins

Servings SERVES 16 muffins


  • 1 bag Success® Quinoa
  • non-stick cooking spray
  • 1 package (9.6 ounces) cooked turkey sausage crumbles
  • 2 cups prepared baking mix*
  • 1 cup cheddar cheese
  • 1 cup milk
  • 4 whole eggs, lightly beaten
  • maple syrup, optional


  • Enjoy a complete breakfast any morning with these quick and easy sausage, egg and cheese muffins made with quinoa to help you power through your day.

  • Step 1

  • Prepare quinoa according to package directions. Preheat oven to 400°F. Coat 16 muffin cups with non-stick cooking spray.

    Step 2

  • In a large bowl combine quinoa, sausage, baking mix, and cheese. Stir in milk and eggs and blend well.

    Step 3

  • Pour ¾ cup of mixture into each muffin cup.

    Step 4

  • Bake 18-20 minutes.

    Step 5

  • Serve warm with maple syrup, if desired. Refrigerate leftovers. Makes 16 muffins.

    Recipe Tips

  • No baking mix? No problem! Substitute 2 cups all-purpose flour + 1 tablespoon baking powder + pinch of salt. For bite-sized muffins use 4 mini muffin tins and decrease cook time to 10-12 minutes
