Enjoy a complete breakfast any morning with these quick and easy Sausage, Egg and Cheese Muffins made with quinoa to help you power through your day.
Step 1
Prepare quinoa according to package directions. Preheat oven to 400°F. Coat 16 muffin cups with nonstick cooking spray.
Step 2
Combine quinoa, baking mix, sausage and cheese in a large bowl. Stir in milk and eggs and blend well.
Step 3
Divide batter among prepared muffin cups, filling 3/4 of the way full.
Step 4
Bake for 18-20 minutes.
Step 5
Serve warm with maple syrup, if using.
Recipe Tips
No baking mix? No problem! Substitute 2 cups all-purpose flour mixed with 1/4 cup butter, 1 tablespoon baking powder and a pinch of salt.
For bite-sized muffins use 4 mini muffin tins and decrease cook time to 10-12 minutes
