Ingredients

  • 1 bag Success® Brown Rice
  • 8 eggs
  • 1 tbsp sesame oil, divided
  • 1/4 tsp pepper
  • 1 cup ham, diced
  • 4 spring onions, thinly sliced, and divided
  • 1/2 red pepper, diced
  • 1/4 cup soy sauce
  • 1 cup shredded Cheddar cheese

Instructions

    Step 1

  • Prepare rice according to package directions. Cool completely.

    Step 2

  • Whisk together eggs and pepper. Pour 1 tbsp sesame oil in a large skillet or wok set over medium heat. Pour eggs into pan. Cook, stirring for 3-5 mins or until soft curds start to form. Transfer to a plate. Wipe pan clean with a paper towel.

    Step 3

  • Heat remaining sesame oil in pan set over medium-high heat. Cook ham, half of the spring onions and red peppers and cook for 3-5 mins or until vegetables are tender. Stir in rice and cook for 3-5 mins or until well coated. Stir in soy sauce. Cook for 2-3 mins or until rice is heated through and veggies are tender. Stir in scrambled eggs.

    Step 4

  • Turn off heat. Sprinkle rice with Cheddar and remaining green onions. Cover and let stand for 2-3 mins or until cheese is melted.

    Recipe Tip

    Substitute Cheddar cheese with Swiss or Gruyere if preferred.
