Ingredients

  • 1 bag Success Garden and Grains™ White Rice, Black Beans, Corn, & Bell Peppers
  • 1 tablespoon olive oil
  • ½ cup chopped onion
  • 1 clove garlic, chopped
  • 2 tablespoons chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper, or to taste
  • 1 cup vegetarian beef crumbles
  • 1 can (15 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • Shredded cheddar cheese, optional
  • Sliced green onions, optional

Instructions

  • Fill your kitchen with the delicious aroma of this comforting vegetarian chili recipe made with a hearty blend of our specialty Success Garden and Grains™ White Rice, Black Beans, Corn, & Bell Peppers.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Heat oil in a medium saucepan over medium heat.  Saute onions, garlic, chili powder, cumin and cayenne pepper until onions are soft and mixture is fragrant, about 2 minutes.

    Step 3

  • Add vegetarian beef crumbles, tomatoes, and tomato sauce.  Reduce heat to low.  Cover and simmer 5 minutes, stirring occasionally.  Stir in rice.

    Step 4

  • Serve topped with cheese and green onions, if desired.

    Recipe Tip

    Omit vegetarian beef crumbles and add 1 cup finely chopped mixed vegetables like squash, zucchini, mushrooms or bell peppers when sautéing onions.
