Fill your kitchen with the delicious aroma of this comforting vegetarian chili recipe made with a hearty blend of our specialty Success Garden and Grains™ White Rice, Black Beans, Corn, & Bell Peppers.
Prepare rice according to package directions.
Heat oil in a medium saucepan over medium heat. Saute onions, garlic, chili powder, cumin and cayenne pepper until onions are soft and mixture is fragrant, about 2 minutes.
Add vegetarian beef crumbles, tomatoes, and tomato sauce. Reduce heat to low. Cover and simmer 5 minutes, stirring occasionally. Stir in rice.
Serve topped with cheese and green onions, if desired.
Omit vegetarian beef crumbles and add 1 cup finely chopped mixed vegetables like squash, zucchini, mushrooms or bell peppers when sautéing onions.
