Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 cup onion, chopped
  • 1 tablespoon taco seasoning mix
  • 1 cup cooked shredded chicken
  • 1/4 cup black beans
  • 1/4 cup corn
  • 1/4 cup bell pepper, chopped
  • 6 large (10-inch) flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup pico de gallo
  • guacamole
  • lime wedges

Instructions

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Heat oil in a medium skillet over medium heat.  Add onions and taco seasoning and sauté 2 minutes. Add chicken, black beans, corn, bell peppers and sauté for an additional 2 minutes. Remove from heat and combine rice until well mixed.

    Step 3

  • Wrap tortillas in damp paper towels and microwave 1 minute, or until warm and pliable.

    Step 4

  • Divide hot rice mixture in center of warm tortillas. Top each with cheese and pico de gallo.

    Step 5

  • Roll into burrito shape. Serve with guacamole and lime wedges.
