Classic Rice Lasagna

Ingredients

  • 2 bags Success® White Rice or Success® Brown Rice
  • non-stick cooking spray
  • 2 each eggs, lightly beaten
  • 1 cup grated Parmesan cheese, divided
  • 2 cups shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 1 lb lean ground beef
  • 1 jar (24 oz.) pasta sauce

Instructions

  • This Brown Rice Lasagna is made with a simple-to-make meat sauce, ricotta cheese, mozzarella, and tons of parmesan.

    Step 1

  • Preheat oven to 375°F. Coat 9×9-inch baking dish with non-stick cooking spray; set aside.

    Step 2

  • Prepare rice according to package directions. Cool slightly. Combine rice, eggs, and 1/2 cup Parmesan cheese in a medium bowl. Mix well; set aside.

    Step 3

  • Combine ¼ cup Parmesan cheese, Mozzarella cheese, and ricotta cheese in a separate bowl. Mix well; set aside. Spray a large non-stick skillet with non-stick cooking spray.

    Step 4

  • Add meat and brown over medium heat; drain off excess fat. Add pasta sauce; continue cooking until thoroughly heated.

    Step 5

  • Spoon one-half of rice mixture into a baking dish. Cover with one-half of cheese mixture. Top with one-half of meat sauce. Repeat layers. Top with remaining ¼ cup Parmesan cheese.

    Step 6

  • Bake 15 to 20 minutes or until thoroughly heated.
