Ingredients

  • 1 bag Success® Brown Rice
  • 1 tbsp olive oil
  • 1/4 cup black beans
  • 1/4 cup corn
  • 1/4 cup bell pepper, diced
  • 1/2 cup chopped onion
  • 1 clove garlic, chopped
  • 2 tbsp chili powder
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne pepper, or to taste
  • 1 cup vegetarian beef crumbles
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • shredded cheddar cheese, optional
  • sliced green onions, optional

Instructions

  • Fill your kitchen with the delicious aroma of this comforting vegetarian chili recipe made with a hearty blend of our specialty Success® Brown Rice.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Heat oil in a medium saucepan over medium heat.  Sauté black beans, corn, bell peppers, onions, garlic, chili powder, cumin and cayenne pepper until onions are soft and mixture is fragrant, about 2 minutes.

    Step 3

  • Add vegetarian beef crumbles, tomatoes, and tomato sauce.  Reduce heat to low.  Cover and simmer 5 minutes, stirring occasionally.  Stir in rice.

    Step 4

  • Serve topped with cheese and green onions, if desired.

    Recipe Tip

    Omit vegetarian beef crumbles and add 1 cup finely chopped mixed vegetables like squash, zucchini, mushrooms when sautéing onions.
