Ingredients

  • 1 bag Success® White Rice
  • 1/4 cup black beans
  • 1/4 cup corn
  • 1/4 cup bell pepper
  • 1/2 cup prepared salsa
  • 1 tablespoon vegetable oil
  • 4 eggs
  • salt (to taste)
  • black pepper (to taste)
  • 1/4 cup queso fresco, crumbled
  • 1 avocado, seeded, peeled, and sliced
  • 24 corn tortilla chips

Instructions

  • Use our delicious Success® White Rice and you’ve got a hearty and filling base for this Tex-Mex inspired breakfast bowl to start your day with a kick.

    Step 1

  • Prepare rice according to package directions.

     Step 2

  • In a large skillet heat olive oil over medium heat. Add black beans, corn, and bell peppers. Cook for 2 minutes.

    Step 3

  • In a medium bowl combine rice, black beans, corn, bell peppers, and salsa. Set aside and keep warm.

    Step 4

  • Heat oil in a large skillet over medium heat. Fry eggs to desired doneness and season with salt and pepper to taste. Keep warm.

    Step 5

  • Divide rice mixture into 4 bowls and top with eggs. Serve with queso fresco and avocado slices. Serve with tortilla chips.

    Add cooked crumbled bacon or chorizo to rice mixture.
