Ingredients

  • 1 bag Success® White Rice
  • 1/4 cup olive oil
  • 12 oz boneless skinless chicken thighs, cut into 1/2-inch pieces
  • 1 cup dry white wine
  • 1 can (14.5 oz) diced tomatoes with onion and garlic, strained and liquid reserved
  • 1/2 lb mussels, scrubbed and debearded
  • 8 jumbo shrimp, peeled, deveined and tail removed

Instructions

  • This mouthwatering Seafood Paella is a Spanish-inspired dish that will please both seafood and meat lovers alike! Use Success® White Rice to absorb all of those incredible flavors.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, heat oil in large high-sided skillet set over medium heat; cook chicken for 3 to 5 minutes or until starting to brown.

    Step 3

  • Stir wine into skillet. Bring to boil; boil until almost all liquid evaporates. Stir in diced tomatoes and 1/4 cup reserved tomato liquid. Bring to boil; cook for 2 minutes. Stir in rice until well coated.

    Step 4

  • Discard any mussels that do not close when tapped. Lay mussels and shrimp over rice. Cover and cook for 3 to 5 minutes or until mussels are opened, and chicken and shrimp are cooked through. Discard any mussels that are not opened.

    Recipe Tips

    For a crispy bottom, remove cover after mussels have opened and turn up the heat to high for the last 2 minutes of cooking.

    Cook rice in chicken broth for added flavor.

    Accent tomatoes with 1/2 tsp saffron threads and 1/2 tsp smoked paprika for Spanish flavors.

    For a pretty presentation, garnish paella with sliced prepared roasted red peppers, cooked peas and finely chopped fresh parsley.
