What is the Difference Between Spanish Rice and Mexican Rice?

Spanish Rice and Mexican Rice are often confused with one another. Spanish Rice has a yellowish/orange color which comes from being cooked with saffron whereas Mexican rice has more of a reddish color from being cooked in tomato juice.

This recipe however does not use saffron, instead it uses a combination of bouillon and tomato sauce to mimic the coloring effect.
