  • Prepare quinoa according to package directions.

  • Top quinoa with romaine, sweet potato, cabbage, black beans, and corn. Top with pico de gallo, guacamole and sprinkle with feta. Serve with lime wedges.


Recipe Tips

For added protein, top salad with grilled chicken, beef, or shrimp. For vegan salad bowl, substitute feta with vegan shredded cheese or plant based meat crumbles. To quickly cook sweet potatoes: Pierce several times with a fork. Microwave on HIGH for 8 to 10 minutes or until fork tender.
