  • 2 bags Success® Tri-Color Quinoa
  • 4 cups romaine lettuce, chopped
  • 2 cups sweet potato, cooked and cubed
  • 2 cups red cabbage, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels, cooked
  • 1 cup prepared pico de gallo
  • 1/2 cup prepared guacamole
  • 1/3 cup feta cheese, finely crumbled
  • 1 lime, cut into wedges


  • Prepare this vegetarian Burrito Salad Bowl made with Success® Tri-Color Quinoa for a hearty lunch ready in just 20 minutes or a satisfying dinner any night of the week!

    Step 1

  • Prepare quinoa according to package directions.

    Step 2

  • Top quinoa with romaine, sweet potato, cabbage, black beans, and corn. Top with pico de gallo, guacamole, and sprinkle with feta. Serve with lime wedges.


    For added protein, top salad with grilled chicken, beef, or shrimp.

    For vegan salad bowl, substitute feta with vegan shredded cheese or plant based meat crumbles.

    To quickly cook sweet potatoes: Pierce several times with a fork. Microwave on HIGH for 8 to 10 minutes or until fork tender.
