Taco Bowls

These tasty taco bowls are made with a blend of quinoa seasoned with your favorite tacos spices, tomatoes, lettuce, Cheddar and of course a dollop of guac on top.

Servings SERVES 4


  • 1 bag Success® Tri-Color Quinoa
  • 1 pkg (1.25 oz.) dry taco seasoning mix
  • 1 can (15 oz.) seasoned black beans, rinsed and drained
  • 1 cup shredded sharp Cheddar cheese
  • 1 ½ cups shredded lettuce
  • 1 each chopped tomato
  • 2 each avocado, peeled and diced
  • salsa
  • sour cream


  • This delicious bowl of Success® Tri-Color Quinoa, taco seasonings and all of your favorite ingredients like avocado, lettuce, tomato and Cheddar cheese is naturally Gluten Free, vegetarian and not to mention tastes amazing.

    Step 1

  • Prepare quinoa according to package directions. Drain and place cooked quinoa in a bowl.

    Step 2

  • Stir in taco seasoning; mix well. Spoon cooked quinoa into 4 serving bowls; add remaining ingredients to each bowl.

    Step 3

  • Top with salsa and sour cream, if desired.

These bowls are a great option for a Meatless Monday or if you’re more of a carnivore, toss in ground beef, shredded chicken or make this into a huevos rancheros scrambled eggs and bacon breakfast.

Although naturally vegetarian, if you want to make these bowls vegan, simply omit the cheese and sour cream or use your favorite substitute. Like we said, can’t get anymore customizable toward your lifestyle.

Make it even more homemade with your own taco seasoning or guacamole. For the guac, mix the ingredients together in just a matter of minutes by blending the avocados, oil, lime juice, cilantro, and salt. Make sure to save some for your next bowl of Mexican Rice and Beans.
