Ingredients

  • 1 bag Success® Tri-Color Quinoa
  • 1 pkg (1.25 oz) dry taco seasoning mix
  • 1 can (15 oz) seasoned black beans, drained
  • 1 1/2 cups shredded lettuce
  • 1 cup shredded Cheddar cheese
  • 2 avocados, peeled and diced
  • 1 tomato, chopped
  • 1 cup salsa (optional)
  • 1/2 cup sour cream (optional)

Instructions

  • These delicious Taco Bowls combine Success® Tri-Color Quinoa, taco seasonings, avocado, lettuce, tomato and Cheddar cheese into a naturally gluten free, vegetarian, meal that tastes amazing.

    Step 1

  • Prepare quinoa according to package directions. Drain and place cooked quinoa into a medium bowl.

    Step 2

  • Stir in taco seasoning; mix well. Spoon cooked quinoa into 4 serving bowls. Divide remaining ingredients between each bowl.

    Step 3

  • Top with salsa and sour cream, if using.

Build Your Bowl

These bowls are a great option for a meatless Monday as is. If you’re more of a carnivore, though, feel free to toss in some ground beef or shredded chicken. You could even make this into huevos rancheros by topping each bowl with a couple of fried eggs and salsa.
