Ingredients

  • 1 bag Success® Tri-Color Quinoa
  • 6 oz chopped chicken or chicken fajita
  • 1 cup frozen fajita-style vegetables (red, yellow and green peppers & onions), thawed
  • 1 cup frozen corn, thawed
  • ¼ cup red onion, finely chopped
  • 2 Tbsps chopped fresh cilantro leaves
  • 1 Tbsp fresh lime juice
  • 1 tsp olive oil
  • salt, to taste
  • ground black pepper, to taste
  • ¼ cup Mexican-style cheese, shredded

Instructions
