  • 1 cup chopped rotisserie chicken
  • 1 cup frozen fajita blend vegetables (onions, green, red and yellow peppers), thawed
  • 1 cup frozen corn, thawed
  • 1/4 cup finely chopped red onion
  • 2 tbsp chopped fresh cilantro leaves
  • 1 tbsp fresh lime juice
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup shredded Mexican-style cheese

  • Prepare quinoa according to package directions. Portion evenly between two serving bowls.
