  • Prepare quinoa according to package directions. Portion quinoa evenly between two serving bowls.

  • Warm the chicken and vegetables in the microwave and evenly layer on top of quinoa. In a small serving bowl, combine corn, onion, cilantro, lime juice, and olive oil. Season with salt and ground black pepper, to taste. Divide corn salsa into bowls. Sprinkle each bowl with cheese and serve immediately.
