Ingredients

  • 2 bags Success® Jasmine Rice
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp red chili flakes
  • 6 cups chicken broth
  • 1 can (19 oz) lentils, drained and rinsed
  • 2 carrots, sliced
  • 4 cups packed spinach
  • 1 cup shredded rotisserie chicken
  • 3 tbsp lemon juice
  • 1 tbsp finely chopped fresh dill

Instructions

  • This comforting Hearty Chicken, Lentil and Rice Soup is loaded with filling ingredients like tender chicken, aromatic jasmine rice and lentils. Easy to make and sure to satisfy, you’ll want to keep this recipe handy when temperatures drop.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, heat oil in a large saucepan set over medium heat. Add onion, garlic, cumin, salt and chili flakes and sauté for 3 to 5 minutes, or until slightly softened.

    Step 3

  • Stir in broth, lentils and carrots and bring to a boil. Reduce heat to medium- low. Cook for 8 to 10 minutes, or until vegetables are tender. Stir in rice, spinach and chicken and cook for 1 to 2 minutes, or until spinach is wilted and rice and chicken are heated through. Stir in lemon juice and dill before serving.

    For a kid-friendly dish, serve the dill as a garnish at the table.

If you’re looking for ways to make comforting, broth-based soups more flavorful, you’ve come to the right place. For this recipe, we’ve given the dish a base layer of flavor by first sautéeing the onion, garlic and spices, including cumin and red chili flakes, to add a bit of a mild kick in every spoonful. Then, we add the broth, lentils and carrots to soften and absorb that delicious combination! 

This recipe calls for precooked chicken, so feel free to use up any leftovers or a store-bought rotisserie chicken. If you have extra time, though, you could take the opportunity to marinate a chicken breast in oil and spices before cooking it and tossing it into your soup.
