Hearty Chicken, Lentil and Rice Soup

Ingredients

  • 2 bags Success® Jasmine Rice
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp red chili flakes
  • 6 cups sodium-reduced chicken broth
  • 1 can (19 oz) lentils, drained and rinsed
  • 2 carrots, sliced
  • 4 cups packed spinach
  • 1 cup shredded rotisserie chicken
  • 3 tbsp lemon juice
  • 1 tbsp finely chopped fresh dill

Instructions

  • This comforting soup is loaded with hearty ingredients like tender chicken, aromatic jasmine rice and lentils with nutrient-dense vegetables!

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, heat oil in large saucepan set over medium heat; cook onion, garlic, cumin, salt and chili flakes for 3 to 5 minutes or until slightly softened.

    Step 3

  • Stir in broth, lentils and carrots; bring to boil. Reduce heat to medium- low; cook for 8 to 10 minutes or until vegetables are tender. Stir in rice, spinach and chicken; cook for 1 to 2 minutes or until spinach is wilted and rice and chicken are heated through. Stir in lemon juice and dill before serving.

    Family-Friendly Tip

    For a kid-friendly dish, substitute parsley for dill or omit entirely, adding herbs at the table for adults.
