French Herb Tomato Soup with Quinoa

Ingredients

  • 1 bag Success® Quinoa
  • 4 tsp butter
  • 2 shallots, diced
  • 2 small carrots, diced
  • 4 cups sodium-reduced vegetable broth
  • 4 tomatoes, chopped
  • 2 tbsp finely chopped fresh chives
  • 1 tbsp finely chopped fresh tarragon

Instructions

  • Cozy up to a bowl of something that will keep you warm and satisfied made with a few simple ingredients like sautéed shallots, carrots and tomatoes blended with broth and topped with quinoa and herbs.

    Step 1

  • Prepare quinoa according to package directions.

    Step 2

  • Meanwhile, melt butter in saucepan set over medium heat; cook shallots and carrots for 3 to 5 minutes or until slightly softened. Stir in broth and tomatoes; bring to boil. Reduce heat to medium-low. Cook for 10 to 12 minutes or until vegetables are very tender.

    Step 3

  • Stir in quinoa; return to simmer. Cook for about 1 minute or until heated through. Sprinkle with chives and tarragon before serving.

    Recipe Tips

    For a kid-friendly recipe, substitute basil for tarragon.
    For a smooth soup option, purée soup using a hand blender before adding quinoa.
