French Herb Tomato Soup with Quinoa

Ingredients

  • 1 bag Success® Tri-Color Quinoa
  • 4 tsp butter
  • 2 small carrots, diced
  • 2 shallots, diced
  • 4 tomatoes, chopped
  • 4 cups vegetable broth
  • 2 tbsp finely chopped fresh chives
  • 1 tbsp finely chopped fresh tarragon

Instructions

  • Cozy up to a bowl of something warm tonight! Made with a few simple ingredients, such as sautéed shallots, carrots and tomatoes, blended with broth and topped with Success® Tri-Color Quinoa and herbs, this soup is satisfying, flavorful and easy to prepare.

    Step 1

  • Prepare quinoa according to package directions.

    Step 2

  • Meanwhile, melt butter in a saucepan set over medium heat. Cook carrots and shallots for 3 to 5 minutes, or until slightly softened. Stir in tomatoes and broth and bring to a boil. Reduce heat to medium-low. Cook for 10 to 12 minutes, or until vegetables are very tender.

    Step 3

  • Stir in quinoa and return soup to a simmer. Cook for 1 minute, or until heated through. Sprinkle with chives and tarragon before serving.

    Recipe Tip

    For a smoother soup, puree it using a hand blender before adding the quinoa.
