  • 2 cans (14 oz each) chicken broth
  • 1 can (12 oz) evaporated milk
  • 4 tbsp cornstarch
  • 4 tbsp water
  • 1 tsp poultry seasoning
  • 1 cup diced, cooked chicken breast
  • 1 cup frozen mixed vegetables, thawed
  • 1/2 tsp salt
  • 1/4 tsp black pepper

If you’ve never made homemade soup before, let’s break down the essentials. While your rice is cooking, in another pot, you’ll want to heat up the chicken broth and evaporated milk. This will give the soup a savory yet creamy base. Next, you’ll want to add the cornstarch. Don’t skip this step, as the cornstarch, seasoning and water mixture will help to thicken your soup as it cooks. While you’re stirring your soup, don’t forget to keep an eye on your quick-cooking rice.

Once the soup has reached the desired thickness, add in the chicken and veggies, then the cooked rice. For an extra bit of flavor, top this dish with shredded cheese and crispy bacon!

  • Prepare rice according to package directions.

  • Bring chicken broth and evaporated milk to a boil in a large saucepan set over medium heat.

  • Dissolve cornstarch in water in a small bowl. Add poultry seasoning and stir into hot broth. Stir constantly for 1 minute. Reduce heat to low and stir in chicken, vegetables, salt and pepper.

    Step 4

  • Continue to simmer for 5 minutes, stirring occasionally. Stir in rice.
