  • 1 bag Success® White Rice
  • 2 cups fresh vegetables (bite-size broccoli, thinly sliced bell peppers, carrots, pea pods or bean sprouts)
  • 1 can (10.75 oz) condensed cream of chicken soup
  • 1 1/3 cups water
  • 1/2 tsp onion powder
  • 1 lb boneless, skinless chicken breast, cut into bite-size pieces
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup shredded Cheddar cheese


  • Whip up this Cheesy Chicken and Rice Casserole and fuel up on chicken, melty Cheddar cheese, filling white rice and loads of your favorite vegetables.

    Step 1

  • Preheat oven to 375°F. Stir rice, vegetables, soup, water and onion powder together in a 2-quart, 12 x 8-inch casserole dish.

    Step 2

  • Top with chicken. Season chicken with salt and pepper. Cover.

    Step 3

  • Bake for 45 minutes, or until rice is tender and chicken is cooked through. Top with cheese.  Return to oven, uncovered, and allow cheese to melt.

    If you’re short on fresh vegetables, simply use your favorite kind of frozen vegetables for this dish.

    If you prefer, try this recipe with Success® Brown Rice instead of white.

International Twists

This versatile casserole can be made many different ways. Give it an Italian spin by replacing the onion powder with 1 teaspoon of Italian seasoning. Also, substitute 1/3 cup of grated Parmesan cheese for the Cheddar.

For a Mexican take, replace the onion powder with 1 teaspoon of chili powder. Use Mexican cheese blend in place of the Cheddar.
