Whip up this Cheesy Chicken and Rice Casserole and fuel up on chicken, melty Cheddar cheese, filling white rice and loads of your favorite vegetables.
Preheat oven to 375°F. Stir rice, vegetables, soup, water and onion powder together in a 2-quart, 12 x 8-inch casserole dish.
Top with chicken. Season chicken with salt and pepper. Cover.
Bake for 45 minutes, or until rice is tender and chicken is cooked through. Top with cheese. Return to oven, uncovered, and allow cheese to melt.
If you’re short on fresh vegetables, simply use your favorite kind of frozen vegetables for this dish.
