It’s not often you can get all your favorite foods in one dish, but this Cheesy Chicken and Rice Casserole makes it easy! With chunks of tender chicken breast, fresh veggies, cheese and our fluffy white rice, it’s our top, last-minute weeknight chicken dish.
For this recipe, we chose a medley of bite-size veggies including broccoli, thinly sliced bell peppers, carrots, pea pods and bean sprouts. However, you can make this recipe any way you like by adding your favorite vegetables. You can also try one of our variations, mentioned below.
Besides its versatility, this dish will be done faster than you can say Cheesy Chicken and Rice Casserole! With a simple, three-step recipe, it’s so easy that even inexperienced cooks can make this dish.
You’ll spend a few minutes prepping and combining your ingredients and then about 45 minutes letting your oven do the rest of the work. While you kick back and wait for your casserole to cook, you can rest assured that clean-up will also be an absolute breeze.
This versatile casserole can be made many different ways. Give it an Italian spin by replacing the onion powder with 1 teaspoon of Italian seasoning. Also, substitute 1/3 cup of grated Parmesan cheese for the Cheddar.
For a Mexican take, replace the onion powder with 1 teaspoon of chili powder. Use Mexican cheese blend in place of the Cheddar.
