  • 2 bags Success® White Rice
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 boneless, skinless chicken breasts
  • 1 1/2 cups heavy whipping cream
  • 1 cup sliced mushrooms
  • 1/2 cup shaved Parmesan cheese
  • 1/3 cup sun-dried tomatoes, sliced

    Step 1

  • Prepare rice according to package directions. Set aside.

    Step 2

  • Heat oil in a large, nonstick skillet over medium heat. Season chicken with salt and pepper and brown for 2 minutes on each side.

    Step 3

  • Add cream, mushrooms, Parmesan and sun-dried tomatoes to skillet. Cover and simmer for 5 to 7 minutes, or until chicken is cooked through.

    Step 4

  • Serve chicken over a bed of hot rice.
