Prepare rice according to package directions. Set aside.
Heat oil in a large, nonstick skillet over medium heat. Season chicken with salt and pepper and brown for 2 minutes on each side.
Add cream, mushrooms, Parmesan and sun-dried tomatoes to skillet. Cover and simmer for 5 to 7 minutes, or until chicken is cooked through.
Serve chicken over a bed of hot rice.
Sauteé some garlic before browning the chicken to enhance the flavors of the dish.
