  • Prepare rice according to package directions.

  • Heat oil in a medium wok or skillet over medium-high heat. Stir-fry chicken until cooked through, about 6 minutes.

  • Add sauce and vegetables and continue to stir-fry 2 more minutes. Fold in bean sprouts, green onions and rice.

  • Portion rice mixture into lettuce leaves. Top with crushed peanuts and cilantro. Serve with lime wedges.


Recipe Tips

Make this vegetarian: Omit chicken and substitute your favorite seasoned firm tofu, cubed or just increase vegetables to 4 cups.
