This Asian-Caribbean fusion fried rice sautéed with Jerk marinated chicken and vegetables makes for a tasty dinner ready in just 25 minutes.
Prepare rice according to package directions.
Heat oil in large wok or skillet set over medium-high heat. Stir-fry cabbage, red onion, and red pepper for 2 to 3 minutes or until vegetables start to soften. Stir in chicken and jerk marinade. Stir-fry for 1 to 2 minutes or until well coated
Stir in rice, soy sauce, and lime juice. Cook for 3 to 5 minutes or until well coated and heated through; garnish with green onion.
Substitute chicken with shrimp if desired.

First, make sure to use long grain rice, we suggest using our aromatic Success® Jasmine Rice for best results as the grains cook up fluffy and separate so the grains heat evenly and absorb all of the flavor! If you have long grain Success® White Rice, it can be substituted in as well. Make it work for you, while still using quality ingredients.
Second, this dish works best using cooked and chilled rice so that no excess moisture makes its way into the dish. Hint: this is a great opportunity to use that leftover rice from yesterday’s Curry Dinner served of Jasmine Rice. However, if you don’t have the time to wait or you’re craving these flavors now, simply lay the cooked rice out on baking tray while you gather your stir fry ingredients.
