Creamy Pesto Chicken and Rice

Ingredients

  • 1 bag Success® White Rice
  • 1 tbsp olive oil
  • 1/2 cup chopped onion
  • 5 cloves garlic, minced
  • 2 cups diced, cooked chicken
  • 1 pkg (8 oz) cream cheese, room temperature
  • 1/2 cup frozen peas
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup prepared pesto
  • 1/4 cup heavy cream
  • 1/4 cup chopped flat leaf parsley
  • 1/4 tsp black pepper

Instructions

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, heat oil in large, nonstick skillet over medium-high heat. Add onions and garlic and sauté for 3-5 minutes, or until tender.

    Step 3

  • Stir in chicken, cream cheese and peas and cook until thoroughly combined and cream cheese has melted, 3-5 minutes.

    Step 4

  • Stir in broth, Parmesan, pesto and cream. Cook for 2 minutes to heat through.

    Step 5

  • Remove from heat and stir in rice. Garnish with parsley and pepper.
