Chicken Florentine

  • 1 bag Success® White Rice
  • non-stick cooking spray
  • 2 Tbsps butter
  • 3 Tbsps all purpose flour
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 1 ½ cups milk
  • ½ cup half and half
  • 2 cups cooked chicken, diced
  • 4 cups fresh spinach leaves, chopped
  • ½ cup grated Parmesan cheese, divided

  • Preheat broiler. Prepare rice according to package directions.

  • Coat a 2-quart casserole dish with non-stick cooking spray.

  • In a medium saucepan melt butter over medium heat. Stir in flour, onion powder, salt, and pepper. Add milk and half and half and stir until smooth. Increase heat to high and bring to a boil, stirring frequently.

  • Stir in rice, chicken, spinach, and ¼ cup Parmesan cheese. Spread mixture into prepared casserole dish and top with remaining cheese. Place under broiler until golden brown, about 2 minutes.
