Try this Chicken Florentine recipe and enjoy the perfectly creamy combination of spinach, cheese, our 10-minute fluffy white rice and savory chunks of tender chicken.
Preheat broiler. Prepare rice according to package directions.
Coat a 2-quart casserole dish with nonstick cooking spray.
Melt butter over medium heat in a medium saucepan. Whisk in flour, onion powder, salt and pepper. Gradually add milk and cream and whisk until smooth. Increase heat to high and bring to a boil, stirring frequently.
Stir in rice, spinach, chicken and 1/4 cup Parmesan cheese. Spread mixture into prepared casserole dish and top with remaining Parmesan. Place under broiler until golden brown, about 2 minutes.
Substitute one 10-ounce package of frozen broccoli or spinach for the fresh spinach used in the recipe.
