Step 1
Prepare rice according to package directions. Meanwhile, preheat oven to 350°F.
Step 2
Coat a 2-quart casserole dish with nonstick cooking spray. Combine soup, broccoli, 1 cup of cheddar cheese and pepper in a medium bowl. Fold in rice.
Step 3
Pour mixture into prepared dish and top with remaining cheddar cheese.
Step 4
Top with the crispy fried onions. Bake for 20 minutes, until bubbling.
