Prepare rice according to package directions.
In a small bowl combine ricotta, parmesan cheese, and parsley. Reserve.
In a large skillet heat oil over medium heat. Add garlic and onions. Sauté 2 minutes.
Add mushrooms and wine. Continue to cook 3 minutes, stirring occasionally.
Add spinach and chicken. Stir until spinach is wilted and chicken is heated through, about 2 minutes.
Stir in rice and season with salt and pepper to taste.
Serve with dollops of reserved cheese mixture.
