Ingredients

  • 1 bag Success® Brown Rice
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp chopped Italian parsley
  • 1 tbsp olive oil
  • 1/3 cup chopped onion
  • 2 garlic cloves, minced
  • 1/2 package (4 oz) mushrooms, sliced
  • 1/4 cup white wine
  • 4 cups baby spinach leaves
  • 2 cups shredded, cooked chicken breast
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • You can’t go wrong with this Chicken and Rice Casserole with Spinach and Mushrooms made with Success® Boil-in-Bag Brown Rice. It’s made with simple ingredients you probably have on hand but is loaded with comforting flavors. After trying it, you’ll want to make it time and time again!

    Step 1

  • Prepare rice according to package directions. Meanwhile, combine ricotta, Parmesan and parsley in a small bowl. Reserve.

    Step 2

  • Heat oil in a large skillet over medium heat. Add onions and garlic and sauté for 2 minutes.

    Step 3

  • Add mushrooms and wine to skillet. Continue to cook for 3 minutes, stirring occasionally.

    Step 4

  • Add spinach and chicken to skillet. Stir until spinach is wilted and chicken is heated through, about 2 minutes. Stir in rice, salt and pepper.

    Step 5

  • Serve casserole topped with dollops of reserved cheese mixture.
