When working with frozen shrimp, it’s best to thaw them gradually in the fridge overnight. Need a last-minute dinner? You can also thaw frozen shrimp in under 30 minutes! To do so, simply place them in a bowl of cold water at room temperature. Stir the shrimp frequently to break up.  

Once shrimp are thawed, dry them on paper towels before proceeding with your recipe. Cook thawed shrimp within 2 days and never refreeze.  

Save time by buying peeled, deveined shrimp. For most recipes, you will want to buy peeled shrimp that are raw. If you only have cooked shrimp, add them to your dish at the end of cooking time so that they don’t get rubbery and overcooked.

Additionally, you can dry brine them prior to cooking in a simple solution of salt and baking soda (approximately 1 teaspoon of salt and 1/4 teaspoon of baking soda per pound of shrimp). Toss the shrimp with the dry brine and let sit for 15-30 minutes. There’s no need to rinse before cooking. Cooking shrimp with their tail on can also help them retain moisture.
