    Recipe Tips

For a loaded burrito bowl, add finely chopped fresh cilantro, vegan shredded cheese, and pickled jalapeño slices. Serve with lime wedges.

Young, green or unripe canned jackfruit works best for this recipe. Ripe jackfruit is sweeter, and its texture will not yield a meaty texture.

Using Plant-Based Jackfruit

Are you struggling to find plant-based options? Add jackfruit to your list of meat-free alternatives you can use for Meatless Monday! This tender and meaty fruit is perfect for adding to salads, tacos, burritos, rice and grain bowls or any other dish where you’d like to swap out meat proteins. If it doesn’t grow fresh near you, find it at your local supermarket in the canned section, refrigerated or frozen section, or the international food aisle.

This fruit is dense and fibrous and is often compared to the texture of pulled pork when cooked, hence it is a great plant-based and tasty ingredient. Jackfruit goes extremely well with bold and spice-filled flavors and seasonings, so try marinating it with some extra chili or cook it with sauces such as barbecue sauce as we’ve done in this burrito bowl recipe!

Cooking Tips: If you’re using fresh jackfruit, steer clear of ripe varieties, as it may have a sweeter and more fruity taste, it doesn’t maintain the shredded texture well when cooked, so it’s better eaten raw. If you’re looking to cook it, make sure to find to look for under ripe fruit, as these offer a great meaty texture when cooked. Jackfruit is also extremely versatile in the way it can be cooked, you can sear it in a pan, sauté it with other veggies or even barbecue it.

Toppings

Make this burrito bowl your own with your favorite burrito ingredients! In addition to white rice and beans, we’ve included avocado, corn, tomatoes and vegan sour cream but feel free to make it your own with salsa or other creamy sauces, lettuce, cheese (vegan or not), and maybe other crunchy vegetables. With all of those colors and flavors, your meal will be a picture-perfect Insta-worthy meal.
