Using Jackfruit

Are you struggling to find plant-based options to include at mealtimes? Add jackfruit to your list of meat-free alternatives you can use for Meatless Monday and beyond! This tender and meaty fruit is perfect for adding to salads, tacos, burritos, rice, grain bowls or any other dish where you’d like to swap out meat proteins for something lighter. If jackfruit doesn’t grow near you, you can find it in the canned section, refrigerated or frozen section, or the international food aisle at your local supermarket.

When raw, jackfruit is dense and fibrous. However, its texture and flavor resemble pulled pork when cooked. This makes jackfruit a great, plant-based substitute for meat. Jackfruit goes extremely well with bold and spice-filled flavors and seasonings, so try marinating it with some extra chili. You can also cook jackfruit with sauces, such as barbecue sauce, as we’ve done in this burrito bowl recipe.

If you’re using fresh jackfruit for cooking, steer clear of overly-ripe fruits. They tend to be sweeter and fruitier and, when cooked, won’t keep their shredded texture well. If you’re looking to cook jackfruit, make sure to find under ripe, or green, fruit that will retain its meaty texture when cooked. Jackfruit is also extremely versatile in the way it can be cooked. You can sear jackfruit in a pan, sauté it with other veggies or even barbecue it.

Toppings

Make this burrito bowl your own by adding your favorite burrito toppings! In addition to white rice and beans, we’ve included avocado, corn, tomatoes and vegan sour cream. Try salsa or other sauces, lettuce, cheese (vegan or not), and other crunchy vegetables. With all of those colors and flavors, you’ll have a picture-perfect, Insta-worthy meal in no time!
