Ingredients

  • 1 bag Success® White Rice
  • 1 can (14 oz) green jackfruit, drained, rinsed and shredded
  • 1 cup smoky barbecue sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 avocado, halved, pitted, peeled and sliced
  • 1 cup corn, cooked
  • 1 cup diced tomatoes
  • 1 tbsp vegan sour cream

Instructions

  • Enjoy all the delicious flavors of your favorite burrito in this yummy, plant-based rice bowl! With a fluffy base of Success® White Rice topped with saucy, pulled jackfruit, this delicious bowl is brimming with color and flavor.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, combine jackfruit and barbecue sauce in a large skillet over medium heat. Bring to a boil. Reduce heat to low; cover and simmer for 8 to 10 minutes, until jackfruit is heated through and sauce has thickened.

    Step 3

  • Divide rice among 4 bowls. Top each bowl with jackfruit and sauce, black beans, avocado, corn and tomatoes. Drizzle with vegan sour cream.

    Recipe Tip

    For a loaded burrito bowl, add finely chopped fresh cilantro, vegan shredded cheese, and pickled jalapeño slices. Serve with lime wedges.

     

Using Jackfruit

When raw, jackfruit is dense and fibrous. However, its texture and flavor resemble pulled pork when cooked. This makes jackfruit a great, plant-based substitute for meat. Jackfruit goes extremely well with bold and spice-filled flavors and seasonings, so try marinating it with some extra chili. You can also cook jackfruit with sauces, such as barbecue sauce, as we’ve done in this burrito bowl recipe.

If you’re using fresh jackfruit for cooking, steer clear of overly-ripe fruits. They tend to be sweeter and fruitier and, when cooked, won’t keep their shredded texture well. If you’re looking to cook jackfruit, make sure to find under ripe, or green, fruit that will retain its meaty texture when cooked. Jackfruit is also extremely versatile in the way it can be cooked. You can sear jackfruit in a pan, sauté it with other veggies or even barbecue it.
