Prepare rice according to package directions.
In a large saucepan set over medium-high heat, combine cooked rice, milk and vanilla; bring to a boil.
Reduce heat to medium-low; cook, stirring, for 12 to 15 minutes or until rice is very tender and mixture is creamy and thickened. Remove from heat. Stir in 3/4 cup chocolate chips until melted and smooth.
Divide pudding among 4 bowls. Garnish with dulce de leche, pretzels, peanuts and remaining chocolate chips. Serve warm.
For variation, top with your favorite chocolate bar add ins such as sweetened flaked coconut, crumbled cookies and/or dried fruit.
