Ingredients

  • 2 bags Success® Tri-Color Quinoa
  • 2 cans (6 oz each) flaked tuna, drained
  • 1/4 cup diced celery
  • 1/4 cup mayonnaise
  • 2 tbsp lime juice
  • 1 tbsp Sriracha sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 green onions, thinly sliced, divided
  • 1 avocado, peeled, pitted and thinly sliced
  • 1 tomato, diced
  • 1 cup shredded purple cabbage

Instructions

  • When it comes to making a quick, tasty lunch, few recipes are as easy and satisfying as this Spicy Tuna Bowl. Packed with protein from quinoa and tuna, and an array of colorful, fresh veggies, this is a complete meal in one bowl!

    Step 1

  • Prepare quinoa according to package directions.

    Step 2

  • Meanwhile, stir together tuna, celery, mayonnaise, lime juice, Sriracha, salt, pepper and half of the green onion in a medium bowl.

    Step 3

  • Divide quinoa evenly among 4 bowls. Top with tuna mixture, avocado, tomato, and shredded cabbage. Sprinkle remaining green onions over top of each bowl.
