This refreshing and light version of your favorite tuna salad is made with a combination of Success® Jasmine Rice, crispy vegetables, tuna and your favorite vinaigrette.
Step 1
Prepare rice according to package directions.
Step 2
Combine green beans, tuna, tomatoes, red onion and olives together in a medium bowl. Add vinaigrette and stir gently to combine.
Step 3
Fold in rice, salt and pepper.
Step 4
Serve on a bed of lettuce leaves.
Recipe Tips
If you’re not a fan of tuna, substitute chicken, shrimp or salmon in this salad.
For more flavor, try adding 1/4 cup of feta cheese to this salad. You could also try garnishing this salad with sliced avocado or toasted nuts.
