  • 2 bags Success® Jasmine Rice
  • 2 cups frozen green beans, thawed
  • 2 cans (6 oz) tuna packed in water, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 can (2.25 oz) sliced ripe olives
  • 1 cup bottled vinaigrette
  • 1/2 tsp salt
  • 1/2 tsp black pepper

This refreshing rice salad is a lighter take on your typical tuna salad. Love the creamy taste of tuna salad but want it without mayonnaise? Try mashing up avocado and mixing it with the tuna before adding it into the salad.

  • This refreshing and light version of your favorite tuna salad is made with a combination of Success® Jasmine Rice, crispy vegetables, tuna and your favorite vinaigrette.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Combine green beans, tuna, tomatoes, red onion and olives together in a medium bowl. Add vinaigrette and stir gently to combine.

    Step 3

  • Fold in rice, salt and pepper.

    Step 4

  • Serve on a bed of lettuce leaves.

    Recipe Tips

  • If you’re not a fan of tuna, substitute chicken, shrimp or salmon in this salad.
