This refreshing and light version of your favorite tuna salad is made with a combination of Success® Jasmine Rice, crispy vegetables, tuna and tossed with your favorite vinaigrette.
Prepare rice according to package directions.
Combine tuna, tomatoes, olives, red onion and green beans in a bowl.
Toss with vinaigrette.
Fold in rice.
Season with salt and pepper.
Serve on a bed of lettuce leaves.
If you’re not a fan of tuna, substitute chicken, shrimp or salmon in the salad. Stir in ¼ cup feta cheese, avocado or nuts.
