Tuna and Jasmine Rice Salad

Ingredients

  • 2 bags Success® Jasmine Rice
  • 2 cups frozen green beans, thawed
  • 2 cans (6 oz) tuna packed in water, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 can (2.25 oz) sliced ripe olives
  • 1 cup bottled vinaigrette
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • lettuce leaves

Instructions

  • This refreshing and light version of your favorite tuna salad is made with a combination of Success® Jasmine Rice, crispy vegetables, tuna and your favorite vinaigrette.

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Combine green beans, tuna, tomatoes, red onion and olives together in a medium bowl. Add vinaigrette and stir gently to combine.

    Step 3

  • Fold in rice, salt and pepper.

    Step 4

  • Serve on a bed of lettuce leaves.

    Recipe Tips

  • If you’re not a fan of tuna, substitute chicken, shrimp or salmon in this salad.

    For more flavor, try adding 1/4 cup of feta cheese to this salad. You could also try garnishing this salad with sliced avocado or toasted nuts.
