  • Prepare rice according to package directions.

  • In a large bowl combine quinoa, cauliflower, tomatoes, olives, pine nuts, feta cheese and red onion.

  • In a small bowl whisk together olive oil, lemon juice, zest and oregano.

  • Pour dressing over quinoa mixture and toss to combine.

  • Season with salt and pepper to taste.
