It’s all Greek to Me

Never tried cauliflower rice before? This mediterranean-style quinoa salad is your chance. Get yourself some pre-made riced cauliflower or try it at home with your blender.

Use this vegetable and quinoa salad bowl to use any leftover vegetables you have at home that need eating alongside all of the greek inspired ingredients.

Although this salad is naturally vegetarian with protein from the quinoa, you can make it a protein powerhouse by adding in a chopped hard boiled egg or shredded cooked chicken. Make it vegan by swapping in a vegan cheese or simply omitting the feta.

Meal Prep Tips
