Crunchy Cauliflower Quinoa

This quick quinoa salad combines cauliflower with the Mediterranean flavors of tomato, olives, feta all tossed in a lemon and oregano vinaigrette.

  • 1 bag Success® Quinoa
  • 1 cup riced cauliflower
  • 1 cup cherry tomatoes, halved
  • ½ cup pitted Kalamata olives, halved
  • ¼ cup toasted pine nuts
  • ¼ cup feta cheese crumbles
  • ¼ cup red onion, chopped
  • ¼ cup extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon dried oregano
  • Salt and pepper

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • In a large bowl combine quinoa, cauliflower, tomatoes, olives, pine nuts, feta cheese and red onion.

    Step 3

  • In a small bowl whisk together olive oil, lemon juice, zest and oregano.

    Step 4

  • Pour dressing over quinoa mixture and toss to combine.

    Step 5

  • Season with salt and pepper to taste.

    Recipe tips: Substitute slivered almonds for toasted pine nuts, if desired.
