This delicious and refreshing vegetarian salad combines Success® Tri-Color Quinoa and cauliflower rice with the mediterranean flavors of cherry tomatoes, olives and feta cheese. A light, homemade citrus vinaigrette brings everything together.
Prepare quinoa according to package directions.
Combine quinoa, cauliflower, tomatoes, olives, feta cheese, onion and pine nuts in a large bowl.
Whisk together olive oil, lemon juice, zest and oregano in a separate bowl.
Pour dressing over quinoa mixture and toss to combine.
Season with salt and pepper.
Substitute slivered almonds for toasted pine nuts, if desired.
