It’s all Greek to Me

Never tried cauliflower rice before? This Mediterranean-style quinoa salad is your chance. To make prep a breeze, start with pre-made riced cauliflower. Or, make it at home with your blender.

This vegetable and quinoa salad bowl is a great place to use up any leftover vegetables you have on hand. Anything goes in this delicious bowl alongside all of the other Mediterranean-style ingredients.

This naturally vegetarian salad has plenty of protein from the quinoa. You can make it into a protein powerhouse, though, by adding in a chopped, hard boiled egg or shredded, cooked chicken. Make this dish vegan by swapping in a vegan cheese or simply omitting the feta.

Meal Prep Tips

To make this a meal prep option that you can take to work, eat on-the-go or quickly toss together for lunch, prepare your own vinaigrette ahead of time. The dressing from this recipe is great for this salad and others. Our suggestion is to double or triple this dressing and keep some for another recipe.
