Ingredients

  • 1 bag Success® Quinoa, uncooked
  • 2 acorn squash, halved and seeds removed
  • 2 slices bacon, chopped
  • 2 cloves garlic, chopped
  • ½ teaspoon poultry seasoning
  • ½ cup onion, chopped
  • 8 ounces shiitake mushrooms, sliced
  • 2 cups baby spinach
  • 1 tablespoon maple syrup, optional
  • Salt and pepper
  • ¼ cup Parmesan cheese, optional

Instructions

  • Stuffed veggies are always a win and this delicious recipe is no exception. Packed with flavor and a multitude of ingredients, you’ll find yourself making this Stuffed Acorn Squash recipe again and again.

    Step 1

  • Prepare quinoa according to package directions.

    Step 2

  • Place squash on a microwave safe dish, cut side down. Pour 2 tablespoons water into dish. Microwave on HIGH 15 minutes, or until knife inserts easily.

    Step 3

  • Meanwhile, heat a large skillet over medium heat. Fry bacon until crisp. Add garlic, poultry seasoning, onions and mushrooms. Sauté 5 minutes.

    Step 4

  • Add quinoa, spinach, syrup, if desired and salt and pepper, to taste. Sauté 2 minutes, until spinach is wilted.

    Step 5

  • Stuff squash with quinoa mixture. Top with cheese, if desired.
