Prepare quinoa according to package directions.
Place squash on a microwave safe dish, cut side down. Pour 2 tablespoons water into dish. Microwave on HIGH 15 minutes, or until knife inserts easily.
Meanwhile, heat a large skillet over medium heat. Fry bacon until crisp. Add garlic, poultry seasoning, onions and mushrooms. Sauté 5 minutes.
Add quinoa, spinach, syrup, if desired and salt and pepper, to taste. Sauté 2 minutes, until spinach is wilted.
Stuff squash with quinoa mixture. Top with cheese, if desired.
