Bring the flavors of Italy to your next barbecue or gathering with these perfect-for-sharing grilled Zucchini Boats Stuffed with Rice and Sausage.
Step 1
Prepare basmati rice according to package directions. Allow to cool slightly.
Step 2
Meanwhile, heat oil in a medium skillet set over medium heat. Cook sausage and garlic for 8 to 10 minutes, or until sausage is browned and cooked through. Stir in diced tomatoes and lemon juice and simmer for 5 minutes. Add rice, 1/3 cup Parmesan, chives, parsley, salt, pepper and chili flakes to skillet. Stir to mix well.
Step 3
Cut each zucchini in half lengthwise. Using melon baller or spoon, scoop out zucchini flesh, leaving about 1/4-inch border all around. Reserve flesh for another use or discard.
Step 4
Preheat grill to medium; grease grate well. Grill zucchini, cut side down, for 3 to 5 minutes, or until well marked. Stuff each zucchini half with 1/4 cup rice filling.
Step 5
Return zucchini to grill; cover and grill for 12 to 15 minutes, or until zucchini is tender and filling is heated through. Sprinkle with remaining Parmesan.
Recipe Tips
For an elegant presentation, place the zucchini boats on a platter. Sprinkle them with parsley and serve with lemon wedges.
