  • Prepare basmati rice according to package directions; set aside. Let cool slightly.

  • Meanwhile, heat oil in skillet set over medium heat; cook sausage and garlic for 8 to 10 minutes or until sausage is browned and cooked through. Stir in diced tomatoes and lemon juice; simmer for 5 minutes. Add rice, 1/3 cup Parmesan, parsley, chives, salt, pepper and chili flakes to skillet, stirring until well combined.

  • Cut each zucchini in half lengthwise. Using melon baller or spoon, scoop out zucchini flesh, leaving about 1/4-inch border all around.

  • Preheat grill to medium; grease grate well. Grill zucchini, cut side down, for 3 to 5 minutes or until well marked. Stuff each zucchini half with 1/4 cup rice filling.

  • Return zucchini to grill; cover and grill for 12 to 15 minutes or until zucchini is tender and filling is heated through. Sprinkle with remaining Parmesan.


Recipe Tips

Sprinkle with parsley and serve with lemon wedges if desired.
