Spicy Rice Salad with Cilantro Dressing

  • 1 bag Success® White Rice
  • 1 cup cilantro, rough chopped
  • 1/4 cup jalapeños coarsely chopped, with seeds
  • 1/4 cup scallions, rough chopped
  • 2 tbsp lime juice
  • 6 tbsp canola oil
  • 1 tsp kosher salt
  • 1/2 cup radishes, sliced
  • 1 1/2 cups baby arugula
  • 1/2 cup cucumber, unpeeled, half-moon slices
  • 1/2 cup avocado, diced


  • Add this unique recipe to salad repertoire. It’s perfect as a side dish or a light lunch.

    Step 1

  • Prepare rice according to package directions. Cool. 

    Step 2

  • In a blender, combine the cilantro, jalapeño, scallion, lime juice, canola oil and salt. Blend until smooth. 

    Step 3

  • Mix cooled rice with radish, arugula, cucumber and avocado. 

    Step 4

  • Add dressing and toss to combine.
