Ingredients

  • 1 bag Success® White Rice
  • 4 boneless, skinless chicken breasts
  • 1/2 tsp dried thyme leaves
  • salt, to taste
  • black pepper, to taste
  • 1 tbsp canola oil
  • 1 can (14.5 oz) Cajun-style stewed tomatoes
  • 1 celery stalk, chopped
  • 1 green bell pepper, cut into strips
  • 1 tsp garlic powder

Instructions

     Step1

  • Prepare rice according to package directions.

    Step 2

  • Sprinkle chicken with thyme, salt and pepper. Heat oil in a large skillet over medium-high heat. Add chicken and brown for 2 minutes on each side.

    Step 3

  • Add tomatoes, celery, bell pepper and garlic powder. Stir to combine. Bring mixture to a boil and cover skillet. Reduce heat and simmer for 20 minutes, or until chicken is cooked through (165°F). Serve over rice.

    Recipe Tip

    If you can’t find Cajun-style stewed tomatoes, simply use 1 can of regular stewed tomatoes plus 2 teaspoons of Cajun seasoning.

What is Cajun Seasoning?

Cajun cuisine is known for its bold flavors and spicy dishes that typically contain seafood, chicken, rice and many aromatic seasonings. Though this recipe does not call for heat, Cajun seasonings often incorporate seasonings like paprika, and cayenne pepper, so feel free to spice it up!

Quality ingredients are very important, especially when buying poultry. To ensure you are buying quality chicken breasts, check for a consistent shape, and make sure they are firm. Do not buy chicken that smells unpleasant, has bruises or discoloration, or has a slimy texture. Ensuring the chicken is cooked through is crucial . To avoid eating raw meat, cut into the middle to check if it’s done: if it is still pink inside, put it back in the skillet! 

About Thyme 

Thyme has a unique and savory taste that complements many proteins, including chicken, beef, and turkey. It is best to use fresh thyme when cooking, as it has a stronger flavor than the dried alternative. Fresh thyme can be found at many grocery stores, or you can easily grow it at home in a backyard garden or windowsill planter. 

To prepare fresh thyme for cooking, remove the leaves from the stem by holding the stem at the top and gently sliding your thumb and forefinger down the stem in the opposite direction of the leaves. This will quickly and easily remove the leaves, which can then be used in your recipe.
