Our Chicken Creole is a delicious dinner option any night of the week. A complete meal that comes together in one pan, it works as well on busy nights, as it does for company.
Step 1
Prepare rice according to package directions.
Step 2
Spray a large, nonstick skillet with cooking spray. Heat over medium-high. Add celery, green pepper, onion and garlic. Sauté until crisp-tender, about 3 minutes. Add mushrooms, and continue cooking for an additional 3 minutes.
Step 3
Add chicken, tomatoes, wine, red pepper flakes, and bay leaf to skillet, and reduce heat to low. Simmer, stirring occasionally, until chicken is cooked through, about 15 minutes.
Step 4
Remove bay leaf. Serve over rice, sprinkled with green onions.
Recipe Tip:
Feel free to replace the dry white wine called for in the recipe with chicken or vegetable stock.
