Prepare rice according to package directions.
Allow chicken to come to room temperature, and season both sides with salt and pepper.
Meanwhile, heat oil in a large skillet over medium-high heat. Brown chicken for 5-6 minutes per side. Add onions, and broth. Simmer on low for 10 minutes, until chicken reaches an internal temperature of 165F, and onions are cooked through.
Stir in 2 tablespoons of basil and parsley. Serve chicken mixture over rice. Garnish with fresh lime wedges, cucumbers, and additional basil.
