  • 1 tbsp olive oil
  • 4 boneless, skinless chicken breasts
  • salt
  • pepper
  • 24 frozen small pearl onions, thawed
  • 1 large cucumber, diced
  • 1/4 cup chicken broth
  • 3 tbsp chopped fresh basil leaves, divided
  • 1 tbsp chopped parsley
  • 4 lime wedges

This masterpiece comes together in just 30 minutes using only one pan and a handful of ingredients. To start, you’ll brown some skinless chicken breast. Then, you’ll add pearl onions, and chicken broth.

Once these ingredients are combined and cooked through, after about 10 minutes, it’s time for some fresh herbs. Stir in chopped basil and parsley and take the pan off the heat.

Set the chicken mixture atop hot brown  rice and garnish with freshly chopped basil, cucumbers and a wedge of lime. You’ll see how this chicken and rice dish gives off citrusy, sweet and salty flavors, all in one.

  • Prepare rice according to package directions.

    Step 2

  • Allow chicken to come to room temperature, and season both sides with salt and pepper. 

    Step 3

  • Meanwhile, heat oil in a large skillet over medium-high heat. Brown chicken for 5-6 minutes per side. Add onions, and broth. Simmer on low for 10 minutes, until chicken reaches an internal temperature of 165F, and onions are cooked through. 

    Step 4

  • Stir in 2 tablespoons of basil and parsley. Serve chicken mixture over rice. Garnish with fresh lime wedges, cucumbers, and additional basil.
