Ingredients

  • 1 bag Success® White Rice or Success® Brown Rice
  • 1 Tbsp oil
  • 4 boneless skinless chicken breast, cut into chunks
  • 24 frozen small pearl onions, thawed
  • 1 large cucumber, diced
  • ¼ cup chicken broth
  • 1 Tbsp fresh basil leaves, chopped
  • 1 Tbsp parsley, chopped
  • lime wedges

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • While rice is cooking, heat oil in skillet. Brown chicken for about 10 minutes. Add onions, cucumber, and broth. Simmer on low for 10 minutes.

  • Stir in basil and parsley. Serve over hot, cooked rice with fresh lime wedges and basil leaves.

Once these ingredients are combined and cooked through, about ten minutes, it’s time for some fresh herbs. Stir in chopped basil and parsley and take the pan off the heat.
